Moreton Bay Bug And Avocado Cocktail

Ingredients
 2 Egg yolks
 2 tsp Lemon juice
 1 tsp Mustard powder
 ½ cup (125ml) olive oil
 2 tbsp Tomato sauce
 23 Drops red Tabasco pepper sauce
 Baby cos lettuce, trimmed, cut into wedges
 6 (about 1kg) cooked Moreton Bay bugs, peeled, halved lengthways, deveined
 2 Ripe avocados, halved, stoned, peeled, cut into wedges

Step 1.

Place the egg yolks, lemon juice and mustard powder in the bowl of a food processor and process until mixture thickens slightly. With the motor running, gradually add the olive oil in a thin, steady stream until well incorporated and the mixture thickens. Add the tomato and Tabasco sauces and stir to combine. Taste and season with salt and pepper.

Step 2.

Arrange some of the lettuce leaves, Morton Bay bug pieces and avocado wedges among small serving bowls. Drizzle with the cocktail sauce and serve immediately.
