Ingredients
(makes 8-12 fritters)
1 cup Peas
1 Quantity batter mix
200 g Seafood marinara mix, roughly chopped
4 Spring onions, chopped
½ tsp Chilli powder
2 Cloves garlic, crushed
½ tsp Dried thyme
1 Juice of 1 lime
Freshly ground black pepper
2 cups Spinach, blanched
Topping And Salad
1 cup Low-fat yoghurt
2 tbsp Seafood dressing
Sprinkling of chilli flakes, optional
4 cups Baby rocket
1 Red capsicum, sliced
1 Small cucumber, sliced or cut using a vegetable peeler
To Garnish
Fresh basil leaves
Fresh lime slices

Step 1.
Combine half the peas with the fritter ingredients, making sure everything is evenly distributed.

Step 2.
Spray a non-stick pan with oil and place over a medium heat. Cook 2-3 fritters at a time for 2-3 minutes each side or until golden.

Mix yoghurt and seafood dressing and sprinkle with chilli flakes if using. Toss rocket, remaining peas, capsicum and cucumber.

Serve fritters with salad and sauce. Garnish with basil and lime slices.

You can replace the 200g marinara mix with 200g mussels (out of shells), chopped or minced. This will give you an iron boost.
