What's better than a one-pot spaghetti? One with Australian Mussels that's ready in just 25 minutes.
Ingredients
375gDried thin spaghetti
2tbspExtra virgin olive oil
4Garlic cloves, crushed
2Drained anchovy fillets, chopped
2tbspTomato paste
2400g cans cherry tomatoes in juice
1kgAustralian Mussels, cleaned
⅓cupFinely chopped fresh flat-leaf parsley leaves
¼cupFinely shredded fresh basil leaves
Small fresh basil leaves, to serve

Step 1.
Cook pasta in a large saucepan of boiling, salted water, following packet directions. Drain well.

Step 2.
Heat oil in same pan over medium-high heat. Cook garlic, anchovies and tomato paste for 1 minute or until fragrant. Add tomatoes. Bring to the boil. Add mussels. Cook, covered, for 4 to 5 minutes or until mussels open.

Step 3.
Add pasta, parsley and basil. Season well with salt and pepper. Toss until heated through and well combined. Serve pasta topped with basil leaves.
